A flat cast iron griddle with two short handles for pancakes, toasted sandwiches and other foods that benefit from an open cooking surface.
Arrange sandwich halves or a few pancakes across the flat surface, leaving enough room to slide a spatula underneath. The low edges make this a practical shape for turning food as it cooks. For a breakfast with several components, work in batches so you can give each item the attention and space it needs.
The griddle measures 14.5 inches across its full length, including the handles, so check that span against your cabinet and cooking area. A flat griddle is useful for foods that need broad contact with the iron; choose a deeper vessel for a recipe with a large amount of liquid. Plan to handwash, dry and oil the pan after use.
