A covered cast iron braiser with a thin casting, elevated handles and three layers of vegetable-oil seasoning for everyday braising and roasting.
Brown portions in the open pan before adding liquid and covering for a gentler finish. A braiser is useful when the ingredients need room across the base without the depth of a stockpot. Choose a recipe that leaves space around the food, and check the lid clearance if you plan to cook larger or taller pieces.
