A nonstick cast aluminum griddle with raised sidewalls and a front collection well, combining a broad cooking area with edges for turning food.
Prepare a breakfast spread with room for several foods on a single rectangular griddle. The raised walls give you an edge to work against when positioning a spatula under a pancake or sandwich. Match the griddle to your burner arrangement and leave enough clearance to reach the controls and handles without crowding the cooking area.
The front well collects liquid directed by the sloped surface, so keep the griddle level and plan how you will handle it after cooking. Let hot fat cool before moving or cleaning the pan. Use low to medium heat, monitor both burners and choose nonmetal utensils; the cast aluminum construction and integrated handles still require careful handling with mitts.
