A square enameled cast iron grill pan with raised cooking ridges, a 12-inch nominal size and a matte black finish.
Use the raised surface for a steak, chicken or vegetables prepared with a grill-pan recipe. The ridges contact the food while the channels collect drippings below. Leave enough space to turn each piece, and plan separate batches when the ingredients would otherwise crowd the pan. A ridged pan also asks for a different cleanup routine from a flat skillet.
