A dark blue enameled cast iron braiser with a wide cooking surface, black matte interior and a weighted lid with a textured underside.
Use the broad cooking area for the first stage of a braise, then add liquid and fit the lid for a slower finish. The shallow, wide format gives ingredients a different arrangement from a tall stockpot, which can be useful for a recipe that calls for food to sit partly in its cooking liquid. Choose the quantity to suit that shape.
The opaque lid is designed for covered cooking, so lift it when the recipe requires a visual check or stirring. Set it on a heat-resistant surface and be mindful of steam. The dark blue finish also works for serving from the pan; keep a trivet ready and protect your hands during the transfer from the oven.
