A Cactus green enameled cast iron braiser with a lid for browning, covered simmering and oven cooking in a 4-quart format.
Brown a layer of chicken or vegetables, add cooking liquid and cover to finish in this Bestow braiser. The 4-quart format suits recipes that need both contact with the pan and some space for sauce. Its Cactus finish makes it a useful serving piece when you want to bring the whole dish to the table.
The lid helps keep a covered braise together, while leaving it off lets you watch a sauce reduce. Allow room around each portion during the browning stage; crowding the pan makes that step harder to control. Cast iron adds weight, so plan to use both side handles and set out a heatproof landing place before lifting.
Finish the recipe in the cooking vessel, then portion it at the table.
Alternate covered cooking with uncovered reduction according to the recipe.
